Description
A comforting and hearty casserole made with ground beef, vegetables, and topped with crispy tater tots and cheese.

- 2 pounds ground beef
- 1 cup chopped carrots
- 1 medium onion (chopped)
- 2 ribs celery (chopped)
- Salt and pepper (to taste)
- 2 cloves garlic (minced)
- 2 tablespoons tomato paste
- 3 tablespoons butter
- 3 tablespoons flour
- 2 tablespoons Worcestershire sauce
- 2 cups beef broth
- 1 cup frozen peas
- 2 cups shredded cheddar cheese
- 2 pounds frozen tater tots
Instructions
- Preheat the oven to 400ºF.
- Heat a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up as it cooks, until browned and cooked through.
- Add the carrots, onion, and celery to the beef. Season to taste with salt and pepper. Continue to cook, stirring occasionally, until the vegetables are softened, about 8 minutes. Add in the garlic and cook until fragrant, about 30 seconds.
- Move the beef to the sides of the pan and add the tomato paste to the center. Let it cook, breaking it up a bit, until warmed through, then stir into the beef.
- Move the beef to the side of the pan again, and melt the butter in the center. Add the flour and mix to combine. Add the Worcestershire sauce.
- Slowly pour in the beef broth, stirring and combining the butter/flour mixture with the beef and vegetables and the beef broth. Let the mixture cook until the sauce has thickened slightly. Season with salt and pepper to taste.
- Stir in the frozen peas.
- Pour the beef mixture into a 9×13-inch casserole dish. Sprinkle the cheddar cheese over the top.
- Arrange the tater tots into a single layer over the top.
- Bake until the tots are crispy and the beef mixture is bubbling, about 35 minutes.
- Let the casserole sit for 10 minutes before serving.
Notes
- This casserole can be made ahead of time and refrigerated before baking.
- Feel free to add other vegetables like corn or bell peppers according to your preference.
