Description

A delicious combination of roasted halloumi and colorful vegetables, perfect for a healthy meal.


Ingredients

  • 250g halloumi cheese, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium zucchini, sliced
  • 1 red onion, cut into wedges
  • 200g cherry tomatoes
  • 2 tbsp extra virgin olive oil
  • 2 tsp dried oregano

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish with nonstick spray.
  2. Chop all vegetables into uniform bite-sized pieces and place them in a large bowl.
  3. Drizzle with olive oil and sprinkle with oregano; toss until evenly coated.
  4. Arrange the vegetables in the baking dish and tuck in halloumi slices among them.
  5. Roast for 25-30 minutes, stirring halfway through until everything is golden brown.
  6. Remove from the oven and serve hot, garnished with fresh herbs if desired.
