- 12 oz chicken sausage, sliced
- 1 cup orzo pasta
- 2 cups broccoli florets
- 2 ½ cups chicken broth
- 1 small onion, chopped
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- ¼ cup Parmesan (optional)
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the sliced chicken sausage and cook until browned.
- Stir in the orzo pasta and chicken broth, bringing to a boil.
- Add the broccoli florets, reduce heat, and simmer until the orzo is cooked and the liquid is absorbed.
- Stir in the lemon juice and Parmesan cheese. Season with salt and pepper to taste.
