Black Bean and Tomato Stew

Description

A hearty black bean and tomato stew flavored with spices and lime.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 white onion
  • 3 garlic cloves (minced)
  • 800 g tinned black beans (2 cans)
  • 400 g tinned diced tomatoes or 3-4 regular tomatoes (diced)
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • salt and black pepper to taste
  • chopped cilantro to garnish
  • 1 lime

Instructions

  1. Heat your oil in a pan and then add the diced onion and saute for 5-7 minutes on low heat until the onion has softened.
  2. Tip in the minced garlic and saute for 1-2 minutes.
  3. Add the seasonings and cook for another 1-2 minutes, stirring them into the onions and garlic.
  4. Tip in the black beans (including the water from the tin), followed by the diced tomatoes.
  5. Stir everything together and leave to simmer on high heat for 10 – 15 minutes or until the sauce has thickened and the liquid has reduced.
  6. Add half the lime juice and then taste, adjusting any seasonings to your preferences.
  7. Garnish with your chopped cilantro, and any other toppings, and serve!

Notes

  • For a spicier version, add some chopped jalapeño or cayenne pepper.
  • This dish pairs well with rice or tortillas.
