Description

A delicious and moist blueberry loaf made with cottage cheese.


Ingredients

  • 1 cup cottage cheese (full-fat or low-fat)
  • 1 cup fresh blueberries (or frozen)
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 2 large eggs
  • 1/4 cup melted butter (or oil)
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. In another bowl, combine cottage cheese, eggs, melted butter, milk, and vanilla until smooth.
  4. Pour the wet mixture into the dry ingredients and fold gently until just combined.
  5. Carefully add blueberries into the batter without mashing them.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until golden brown and a toothpick comes out clean.
