Description

A rich and creamy mashed potato dish, perfect as a side for any meal.


Ingredients

Scale
  • 2 pounds Russet potatoes or Yukon Gold potatoes
  • 1 tablespoon Salt
  • 4 cloves Fresh garlic, minced
  • 4 tablespoons Unsalted butter
  • 1 cup Freshly grated Parmesan cheese
  • 1/2 cup Whole milk
  • 1/2 cup Heavy cream
  • to taste Freshly ground black pepper
  • 1 teaspoon Dried thyme (optional)
  • to taste Fresh chives or parsley (optional)
  • 1/4 teaspoon Fresh nutmeg (optional)

Instructions

  1. Peel the potatoes and cut them into roughly uniform 1-inch chunks.
  2. Place the potato chunks in a large pot and cover them with cold water by about an inch. Add a generous tablespoon of salt.
  3. Bring the water to a rolling boil over high heat, then reduce the heat to medium and simmer until the potatoes are incredibly tender, about 15-20 minutes.
  4. Carefully drain the potatoes in a colander and let them sit for a minute or two to dry out slightly.
  5. Return the hot, drained potatoes to the empty pot or a large mixing bowl and mash them with a potato masher, leaving a few small lumps for texture.
  6. Add unsalted butter to the hot potatoes and stir until melted.
  7. Stir in the minced fresh garlic.
  8. Add freshly grated Parmesan cheese and mix until melted into the potatoes.
  9. Slowly drizzle in warm milk and heavy cream, mashing and stirring until achieving a creamy, somewhat loose, ‘mud-like’ consistency.
  10. Season generously with salt and freshly ground black pepper, tasting and adjusting as necessary.
  11. Scoop the potato mixture into a lightly greased 9×13-inch baking dish, spreading it evenly and creating gentle swirls or peaks.
  12. Sprinkle additional freshly grated Parmesan cheese over the top and add tiny pats of butter if desired.
  13. Bake in a preheated oven at 375°F (190°C) for 25-35 minutes until heated through, bubbly around the edges, and golden brown on top.
  14. Let it rest for 5-10 minutes before serving.

Notes

  • For an extra depth of flavor, consider roasting the garlic before adding it to the potatoes.
