Ingredients

  • 2 cups all-purpose flour
  • 1 cup shredded coconut
  • ¾ cup sugar
  • 3 large eggs
  • 1 cup milk
  • ½ cup unsalted butter, melted
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 ½ cups sugar
  • 1 ½ cups water
  • 1 teaspoon lemon juice
  • ½ teaspoon vanilla extract

Instructions

  1. Begin by preheating your oven to 350°F (175°C). Grease a baking dish lightly and set it aside.
  2. In a large bowl, whisk together the eggs and sugar until the mixture becomes light and slightly fluffy. Add the milk, melted butter, and vanilla extract, stirring until smooth.
  3. In a separate bowl, combine the flour, baking powder, salt, and shredded coconut. Gradually fold the dry ingredients into the wet mixture, stirring just until combined.
  4. Pour the batter into the prepared baking dish and smooth the top. Bake for about 30–35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  5. While the baba bakes, prepare the syrup. In a saucepan, combine sugar and water and bring to a gentle boil. Stir until the sugar dissolves, then add lemon juice and vanilla extract. Let it simmer for a few minutes before removing from heat.
  6. Once the Coconut Baba comes out of the oven, immediately pour the warm syrup evenly over the hot cake. Allow it to cool before slicing.
  7. As it rests, the texture becomes perfectly soft and moist, making each piece melt in your mouth.
