- 2 cups all-purpose flour
- 1 cup shredded coconut
- ¾ cup sugar
- 3 large eggs
- 1 cup milk
- ½ cup unsalted butter, melted
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract

- 1 ½ cups sugar
- 1 ½ cups water
- 1 teaspoon lemon juice
- ½ teaspoon vanilla extract
Instructions
- Begin by preheating your oven to 350°F (175°C). Grease a baking dish lightly and set it aside.
- In a large bowl, whisk together the eggs and sugar until the mixture becomes light and slightly fluffy. Add the milk, melted butter, and vanilla extract, stirring until smooth.
- In a separate bowl, combine the flour, baking powder, salt, and shredded coconut. Gradually fold the dry ingredients into the wet mixture, stirring just until combined.
- Pour the batter into the prepared baking dish and smooth the top. Bake for about 30–35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- While the baba bakes, prepare the syrup. In a saucepan, combine sugar and water and bring to a gentle boil. Stir until the sugar dissolves, then add lemon juice and vanilla extract. Let it simmer for a few minutes before removing from heat.
- Once the Coconut Baba comes out of the oven, immediately pour the warm syrup evenly over the hot cake. Allow it to cool before slicing.
- As it rests, the texture becomes perfectly soft and moist, making each piece melt in your mouth.

- For added flavor, use fresh coconut if available.
