A fresh and zesty corn salad with a kick of chipotle.
Ingredients

- 2 cups sweet corn (fresh or canned, drained)
- 1 medium red onion (finely chopped)
- 1 medium red bell pepper (finely chopped)
- 1 medium jalapeño (seeded and finely chopped)
- 1/4 cup cilantro (chopped)
- 1 medium lime (juiced)
- 1 teaspoon chipotle powder
- 1/2 teaspoon salt (to taste)
- 1/4 teaspoon black pepper (to taste)
Instructions
- In a mixing bowl, combine the sweet corn, red onion, red bell pepper, jalapeño, and cilantro.
- Squeeze the lime juice over the mixture.
- Add chipotle powder, salt, and black pepper to the bowl.
- Toss everything together until well combined.
- Taste and adjust seasoning if necessary. Serve immediately or chill in the refrigerator for 30 minutes to enhance flavors.
Notes
- This salad can be made a day in advance for better flavor.
- Adjust the heat by varying the amount of jalapeño used.
