Delicious fajita chicken served with fresh greens and a tangy dressing.
Ingredients

- 4 boneless, skinless chicken breasts
- 2 cups bell peppers (mixed colors), sliced
- 1 large yellow onion, sliced
- 2 tbsp extra virgin olive oil
- 2 tbsp fajita seasoning
- 4 cups fresh greens (romaine or mixed)
- Juice of 2 limes
- 1 cup salsa or dressing of choice
Instructions
- Marinate the chicken: In a bowl, mix olive oil, fajita seasoning, and lime juice. Add chicken breasts and marinate for at least 30 minutes.
- Sauté vegetables: Heat a skillet over medium-high heat. Add sliced bell peppers and onions; cook until softened (5-7 minutes). Remove from skillet.
- Cook the chicken: In the same skillet, add marinated chicken breasts. Cook for 6-8 minutes on each side until golden brown and cooked through.
- Slice everything: Once cooled slightly, slice the chicken into strips and combine with sautéed veggies.
- Toss with greens: In a large bowl, mix fresh greens with the chicken and vegetables. Drizzle with salsa or dressing before serving.
Notes
- For extra flavor, let the chicken marinate longer if possible.
- Feel free to add other vegetables like zucchini or mushrooms.
