Description

Delicious fajita chicken served with fresh greens and a tangy dressing.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups bell peppers (mixed colors), sliced
  • 1 large yellow onion, sliced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fajita seasoning
  • 4 cups fresh greens (romaine or mixed)
  • Juice of 2 limes
  • 1 cup salsa or dressing of choice

Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, fajita seasoning, and lime juice. Add chicken breasts and marinate for at least 30 minutes.
  2. Sauté vegetables: Heat a skillet over medium-high heat. Add sliced bell peppers and onions; cook until softened (5-7 minutes). Remove from skillet.
  3. Cook the chicken: In the same skillet, add marinated chicken breasts. Cook for 6-8 minutes on each side until golden brown and cooked through.
  4. Slice everything: Once cooled slightly, slice the chicken into strips and combine with sautéed veggies.
  5. Toss with greens: In a large bowl, mix fresh greens with the chicken and vegetables. Drizzle with salsa or dressing before serving.
