- 8 ounces rotini pasta
- 1 pound boneless, skinless chicken breasts
- 1 cup chicken broth
- 4 ounces cream cheese
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs
Instructions
- Cook the rotini in salted boiling water until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and garlic powder; cook until browned and cooked through (5-7 minutes), then remove from skillet.
- In the same skillet, add chicken broth and bring to a simmer. Stir in softened cream cheese until smooth, then gradually add cheddar cheese until melted.
- Return cooked pasta and chicken to the skillet; mix well to coat evenly with sauce. Stir in herbs as needed.
- Serve hot, garnished with chopped basil.
