- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1 pound boneless skinless chicken breast, diced
- 1 medium head cauliflower, cut into florets
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped parsley
- 1 tablespoon lemon juice
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, and celery, then cook until softened.
- Stir in the garlic and cook for 30 seconds.
- Add the diced chicken, salt, pepper, and thyme, then stir well.
- Pour in the chicken broth and bring everything to a gentle simmer.
- Add the cauliflower florets and cook until the chicken is cooked through and the cauliflower is tender.
- Lightly mash a portion of the cauliflower if you want a thicker soup.
- Stir in the parsley and lemon juice.
- Taste, adjust seasoning, and serve hot.
