Description

Ingredients

  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 pound boneless skinless chicken breast, diced
  • 1 medium head cauliflower, cut into florets
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped parsley
  • 1 tablespoon lemon juice

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery, then cook until softened.
  3. Stir in the garlic and cook for 30 seconds.
  4. Add the diced chicken, salt, pepper, and thyme, then stir well.
  5. Pour in the chicken broth and bring everything to a gentle simmer.
  6. Add the cauliflower florets and cook until the chicken is cooked through and the cauliflower is tender.
  7. Lightly mash a portion of the cauliflower if you want a thicker soup.
  8. Stir in the parsley and lemon juice.
  9. Taste, adjust seasoning, and serve hot.
