- 8 ounces white chocolate, chopped
- 1 tablespoon vegetable oil
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
- In a large bowl, beat butter, granulated sugar, and brown sugar until creamy.
- Add egg, vanilla extract, and maple syrup. Beat until well combined.
- Gradually add flour mixture to wet ingredients, mixing until just combined.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
- Bake for 10-12 minutes until edges are lightly golden. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
- Melt white chocolate with vegetable oil in a double boiler or microwave, stirring until smooth.
- Dip half of each cooled cookie into melted white chocolate. Place on parchment paper to set.
- Allow chocolate to harden completely before serving.
