Description
A delicious pasta salad featuring crispy bacon, fresh broccoli, and a creamy dressing.
Ingredients

- 2 cups Pasta (Cook until al dente)
- 2 cups Fresh Broccoli (Chopped into florets)
- 6 slices Bacon (Crispy, kept separate until serving)
- 1 small Red Onion (Diced)
- 1 cup Mayonnaise (Light mayo or Greek yogurt can be used)
- 2 tablespoons Red Wine Vinegar (Apple cider vinegar can be substituted)
- 1 tablespoon Sugar (Optional)
- to taste Salt
- to taste Pepper
Instructions
- Cook the Pasta according to package instructions until al dente, about 8-10 minutes. Drain and let cool.
- Chop the Fresh Broccoli into bite-sized florets, dice the Red Onion, and chop the Bacon into small pieces.
- In a bowl, whisk together the Mayonnaise, Red Wine Vinegar, Sugar, Salt, and Pepper until smooth to create the dressing.
- In a large mixing bowl, combine the cooled Pasta, Broccoli, and Onion. Toss gently.
- Pour the dressing over the pasta mixture and stir gently. Do not add Bacon yet.
- Cover and refrigerate for at least 3 hours to allow flavors to meld.
- Just before serving, fold in the Bacon for a fresh, crunchy texture.
Notes
- For a healthier option, consider using Greek yogurt instead of mayonnaise.
- Letting the salad chill allows the flavors to develop.
