Description

A delicious pasta salad featuring crispy bacon, fresh broccoli, and a creamy dressing.


Ingredients

Scale
  • 2 cups Pasta (Cook until al dente)
  • 2 cups Fresh Broccoli (Chopped into florets)
  • 6 slices Bacon (Crispy, kept separate until serving)
  • 1 small Red Onion (Diced)
  • 1 cup Mayonnaise (Light mayo or Greek yogurt can be used)
  • 2 tablespoons Red Wine Vinegar (Apple cider vinegar can be substituted)
  • 1 tablespoon Sugar (Optional)
  • to taste Salt
  • to taste Pepper

Instructions

  1. Cook the Pasta according to package instructions until al dente, about 8-10 minutes. Drain and let cool.
  2. Chop the Fresh Broccoli into bite-sized florets, dice the Red Onion, and chop the Bacon into small pieces.
  3. In a bowl, whisk together the Mayonnaise, Red Wine Vinegar, Sugar, Salt, and Pepper until smooth to create the dressing.
  4. In a large mixing bowl, combine the cooled Pasta, Broccoli, and Onion. Toss gently.
  5. Pour the dressing over the pasta mixture and stir gently. Do not add Bacon yet.
  6. Cover and refrigerate for at least 3 hours to allow flavors to meld.
  7. Just before serving, fold in the Bacon for a fresh, crunchy texture.

Notes

  • For a healthier option, consider using Greek yogurt instead of mayonnaise.
  • Letting the salad chill allows the flavors to develop.
