Description

This creamy sun-dried tomato chicken pasta is a delicious and comforting dish, perfect for any night of the week.


Ingredients

  • 3 tablespoons oil-packed sun-dried tomatoes
  • 2 tablespoons salted butter
  • 1 medium chopped shallot
  • 4 cloves chopped garlic
  • 2 teaspoons crushed Calabrian chili paste
  • 1 cup heavy cream
  • 1 pound boneless skinless chicken breasts
  • 3 teaspoons Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon red pepper flakes
  • to taste kosher salt
  • to taste black pepper
  • 8 ounces short cut pasta
  • 1 cup grated parmesan cheese
  • 2 cups fresh baby spinach

Instructions

  1. Drain 3 tablespoons of oil from the jar of sun-dried tomatoes into a large pot or skillet. Chop the sun-dried tomatoes and set them aside for later.
  2. Over medium-high heat, add the cubed chicken along with 3 teaspoons of Italian seasoning, paprika, and a pinch of red pepper flakes, salt, and pepper. Cook until golden brown, about 5 minutes. Sprinkle 1/4 cup parmesan on top, cook for another minute, then remove the chicken from the pot.
  3. In the same pot, add a drizzle of oil and the salted butter. Toss in the chopped shallot, garlic, Calabrian chili paste, and 1 teaspoon of Italian seasoning. Cook until fragrant, about 3 minutes.
  4. Add 3 1/2 cups of water to the pot and bring it to a boil. Once boiling, add the short-cut pasta and cook, stirring often, until al dente, which should take about 8 minutes.
  5. Stir in the heavy cream, fresh baby spinach, chopped sun-dried tomatoes, and the remaining 3/4 cup of parmesan cheese. Return the chicken back to the pot along with any accumulated juices on the plate.
  6. Dish out the pasta in bowls, topping each serving with fresh parmesan and a sprinkle of basil for an aromatic finish.
