Description
This creamy sun-dried tomato chicken pasta is a delicious and comforting dish, perfect for any night of the week.

- 3 tablespoons oil-packed sun-dried tomatoes
- 2 tablespoons salted butter
- 1 medium chopped shallot
- 4 cloves chopped garlic
- 2 teaspoons crushed Calabrian chili paste
- 1 cup heavy cream
- 1 pound boneless skinless chicken breasts
- 3 teaspoons Italian seasoning
- 1 teaspoon paprika
- 1 teaspoon red pepper flakes

- 8 ounces short cut pasta
- 1 cup grated parmesan cheese
- 2 cups fresh baby spinach
Instructions
- Drain 3 tablespoons of oil from the jar of sun-dried tomatoes into a large pot or skillet. Chop the sun-dried tomatoes and set them aside for later.
- Over medium-high heat, add the cubed chicken along with 3 teaspoons of Italian seasoning, paprika, and a pinch of red pepper flakes, salt, and pepper. Cook until golden brown, about 5 minutes. Sprinkle 1/4 cup parmesan on top, cook for another minute, then remove the chicken from the pot.
- In the same pot, add a drizzle of oil and the salted butter. Toss in the chopped shallot, garlic, Calabrian chili paste, and 1 teaspoon of Italian seasoning. Cook until fragrant, about 3 minutes.
- Add 3 1/2 cups of water to the pot and bring it to a boil. Once boiling, add the short-cut pasta and cook, stirring often, until al dente, which should take about 8 minutes.
- Stir in the heavy cream, fresh baby spinach, chopped sun-dried tomatoes, and the remaining 3/4 cup of parmesan cheese. Return the chicken back to the pot along with any accumulated juices on the plate.
- Dish out the pasta in bowls, topping each serving with fresh parmesan and a sprinkle of basil for an aromatic finish.
