A delicious and fluffy focaccia topped with fruit jam and butter.
Ingredients

- 2 cups all-purpose flour
- 2 teaspoons instant yeast
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 3/4 cup warm water
- 2 tablespoons olive oil (plus more for greasing)
- 1/3 cup fruit jam or preserves (e.g., raspberry, strawberry, apricot)
- 2 tablespoons butter, cut into small pieces
- 2 tablespoons granulated sugar or cinnamon sugar for topping
Instructions
- In a large bowl, mix flour, instant yeast, sugar, and salt.
- Add warm water and olive oil. Stir until a sticky dough forms.
- Cover and let rise in a warm spot for 45 minutes or until puffy.
- Preheat oven to 375°F (190°C) and oil an 8×8-inch baking pan.
- Transfer dough to the pan and gently press it to the edges.
- Use your fingers to dimple the surface. Spoon small amounts of jam into the dimples, spreading slightly.
- Dot the surface with butter pieces and sprinkle generously with sugar or cinnamon sugar.
- Let rest for 10 minutes, then bake for 18–22 minutes or until golden and fluffy.
- Cool slightly before slicing to allow the jam to set.
Notes
- For a sweeter topping, use cinnamon sugar.
- Try different flavors of jam for variety.
