Ingredients

  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • Red gel food coloring
  • 1/4 cup coarse sugar or crushed peppermint candies for coating

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the egg, vanilla extract, and peppermint extract to the butter mixture and mix well.
  5. Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Add red gel food coloring to achieve desired color.
  7. Roll the dough into balls and coat in coarse sugar or crushed peppermint candies.
  8. Place on a baking sheet and bake for 10-12 minutes or until edges are lightly golden.
  9. Let cool before serving.
