Description

A hearty and flavorful beef stew, perfect for a comforting meal.


Ingredients

  • 2 tablespoons olive oil
  • 2 pounds beef stew meat, cubed
  • 1 large onion, chopped
  • 4 carrots, sliced
  • 4 potatoes, cubed
  • 4 cups beef broth
  • 1 cup tomato sauce
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 1 cup water

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add beef cubes and brown on all sides, about 5-7 minutes.
  3. Remove beef and set aside. In the same pot, add onion and carrots. Cook until softened, about 5 minutes.
  4. Return beef to the pot. Add potatoes, beef broth, tomato sauce, thyme, rosemary, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 1 hour, stirring occasionally.
  6. In a small bowl, mix flour and water until smooth. Stir into the stew to thicken.
  7. Cook uncovered for an additional 30 minutes until beef is tender and stew is thickened. Serve hot.

Notes

  • This stew can be made in advance and tastes even better the next day.
  • Feel free to add other vegetables such as peas or green beans for added flavor.
