- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated sugar (for rolling)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, cream butter and sugar until light and fluffy, about 2-3 minutes.
- Beat in egg and vanilla extract until well combined.
- Gradually add flour mixture to butter mixture, mixing until just combined.
- Shape dough into 1-inch balls and roll each in granulated sugar to coat.
- Place balls on prepared baking sheets, spacing about 2 inches apart.
- Bake for 8-10 minutes, until edges are lightly golden.
- Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
Notes
- Make sure the butter is softened for easier creaming with sugar.
- For a variation, consider adding chocolate chips or sprinkles.
