Instructions
- Melt the Butter: In a large pot, melt the butter over medium heat. This step is crucial—it should bubble but not foam too much.
- Sauté the Aromatics: Add the finely chopped onion and minced garlic to the pot. Sauté until they’re soft and fragrant, about 3-4 minutes.
- Cook the Broccoli: Toss in the fresh or frozen broccoli florets along with the chicken broth. Bring to a gentle boil, then reduce heat and let it simmer for 10-15 minutes until the broccoli is tender and bright green.
- Incorporate Cream Cheese: Lower the heat even further, and stir in the cream cheese. Mix well until it’s fully melted and smooth.
- Add the Heavy Cream: Pour the heavy cream into the pot, stirring gently to combine everything. Warm it through, but be careful not to let it boil—keep that creaminess!
- Melt the Cheddar: Gradually add the shredded cheddar cheese, stirring continuously until it melts completely and the soup is smooth and creamy.
- Season to Taste: Season the soup with salt, pepper, and any optional spices you desire to enhance the flavor.
- Blend (Optional): For a smoother texture, blend part of the mixture using an immersion blender, or leave it chunky for a hearty vibe.
