Description

A rich and creamy soup made with fresh broccoli, cheddar cheese, and aromatics.

Ingredients

Scale
  • 4 cups Broccoli Florets (Fresh or Frozen)
  • 2 tablespoons Butter (Or olive oil for dairy-free)
  • 1 medium Onion (Finely chopped)
  • 2 cloves Garlic (Minced)
  • 4 cups Chicken Broth (Or Bone Broth)
  • 1 cup Heavy Cream (Or full-fat coconut milk for dairy-free)
  • 2 cups Shredded Sharp Cheddar Cheese (Or Gruyère, smoked gouda)
  • 4 oz Cream Cheese (Or dairy-free alternatives)
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Ground Mustard (Optional)
  • 1 teaspoon Paprika or Cayenne (Optional)

Instructions

  1. Melt the Butter: In a large pot, melt the butter over medium heat. This step is crucial—it should bubble but not foam too much.
  2. Sauté the Aromatics: Add the finely chopped onion and minced garlic to the pot. Sauté until they’re soft and fragrant, about 3-4 minutes.
  3. Cook the Broccoli: Toss in the fresh or frozen broccoli florets along with the chicken broth. Bring to a gentle boil, then reduce heat and let it simmer for 10-15 minutes until the broccoli is tender and bright green.
  4. Incorporate Cream Cheese: Lower the heat even further, and stir in the cream cheese. Mix well until it’s fully melted and smooth.
  5. Add the Heavy Cream: Pour the heavy cream into the pot, stirring gently to combine everything. Warm it through, but be careful not to let it boil—keep that creaminess!
  6. Melt the Cheddar: Gradually add the shredded cheddar cheese, stirring continuously until it melts completely and the soup is smooth and creamy.
  7. Season to Taste: Season the soup with salt, pepper, and any optional spices you desire to enhance the flavor.
  8. Blend (Optional): For a smoother texture, blend part of the mixture using an immersion blender, or leave it chunky for a hearty vibe.

Notes

  • For a dairy-free version, substitute butter with olive oil and use dairy-free cream cheese and heavy cream.
  • This soup can also be frozen for later use.
