Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a medium mixing bowl, whisk together the cottage cheese, olive oil, and egg until smooth and creamy.
- In another bowl, mix together the all-purpose flour, baking powder, and salt until evenly distributed.
- Gently fold in the chopped baby spinach and shredded mozzarella cheese into the dry mixture.
- Combine the wet and dry mixtures without overmixing.
- Knead the dough gently, then divide and shape into bagels.
