Description

A delicious and creamy garlic chicken pasta dish with spinach, sun-dried tomatoes, and Parmesan cheese.


Ingredients

  • 3 boneless, skinless chicken breasts (about 1 lbs)
  • 4 cloves fresh garlic, minced
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook for about 6-7 minutes on each side until golden brown. Remove and set aside.
  2. In the same skillet, sauté garlic and sun-dried tomatoes for about 1-2 minutes until fragrant.
  3. Pour in heavy cream and simmer for approximately 5 minutes until slightly thickened.
  4. Stir in fresh spinach and Parmesan cheese until melted and combined.
  5. Add cooked pasta to the skillet and toss gently to coat with the creamy sauce.
  6. Serve hot, garnishing with extra Parmesan if desired.

Notes

  • For extra flavor, marinate the chicken with Italian seasoning before cooking.
  • Feel free to substitute with other pasta shapes if desired.
