Description
A delicious and creamy garlic chicken pasta dish with spinach, sun-dried tomatoes, and Parmesan cheese.

- 3 boneless, skinless chicken breasts (about 1 lbs)
- 4 cloves fresh garlic, minced
- 8 oz fettuccine or penne pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 2 tsp Italian seasoning
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook for about 6-7 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, sauté garlic and sun-dried tomatoes for about 1-2 minutes until fragrant.
- Pour in heavy cream and simmer for approximately 5 minutes until slightly thickened.
- Stir in fresh spinach and Parmesan cheese until melted and combined.
- Add cooked pasta to the skillet and toss gently to coat with the creamy sauce.
- Serve hot, garnishing with extra Parmesan if desired.
Notes
- For extra flavor, marinate the chicken with Italian seasoning before cooking.
- Feel free to substitute with other pasta shapes if desired.
