A delicious appetizer or snack made with roasted mushrooms and toasted baguette.
Ingredients

- 1 crusty baguette
- 8 oz baby bella mushrooms, sliced
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- 3 garlic cloves, minced
- 1 tsp fresh thyme leaves
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine sliced mushrooms with minced garlic, thyme, olive oil, and balsamic vinegar. Toss until well coated.
- Spread the mushroom mixture on the prepared baking sheet in a single layer.
- Roast in the oven for 20-25 minutes until golden brown, stirring halfway through.
- Slice the baguette into half-inch rounds, drizzle with olive oil, and toast on another baking sheet for about 5-7 minutes until golden.
- Top each toasted baguette slice with a spoonful of roasted mushrooms and serve.
Notes
- Adjust the amount of balsamic vinegar to taste.
- For a bit of heat, add red pepper flakes to the mushroom mixture.
