Description

A delicious appetizer or snack made with roasted mushrooms and toasted baguette.


Ingredients

  • 1 crusty baguette
  • 8 oz baby bella mushrooms, sliced
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 tsp fresh thyme leaves

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine sliced mushrooms with minced garlic, thyme, olive oil, and balsamic vinegar. Toss until well coated.
  3. Spread the mushroom mixture on the prepared baking sheet in a single layer.
  4. Roast in the oven for 20-25 minutes until golden brown, stirring halfway through.
  5. Slice the baguette into half-inch rounds, drizzle with olive oil, and toast on another baking sheet for about 5-7 minutes until golden.
  6. Top each toasted baguette slice with a spoonful of roasted mushrooms and serve.

Notes

  • Adjust the amount of balsamic vinegar to taste.
  • For a bit of heat, add red pepper flakes to the mushroom mixture.
