  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced

  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Start by boiling whole Yukon Gold potatoes in salted water until they are fork-tender, about 15 to 20 minutes. The potatoes should be soft enough to flatten without falling apart.
  2. While the potatoes are boiling, melt the unsalted butter in a small saucepan over medium heat. Add minced garlic and cook gently until fragrant, about 2 minutes, being careful not to brown the garlic.
  3. Preheat your oven to 450°F (230°C). On a baking sheet, drizzle olive oil generously—this helps prevent sticking and adds crispiness.
  4. Drain the potatoes and let them cool slightly. Place each potato on the baking sheet and gently press them down using the bottom of a glass or a potato masher until they are about half an inch thick.
