Description
A refreshing salad featuring grilled chicken marinated in citrus juices and fresh herbs, served on a bed of mixed greens.

- 4 boneless, skinless chicken breasts
- 1/4 cup freshly squeezed orange juice
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup olive oil (extra virgin)
- 1/4 cup mixed fresh herbs (parsley, cilantro, basil)
- 6 cups mixed greens (baby spinach, arugula)
- 2 tbsp honey

Instructions
- Marinate the Chicken: In a bowl, combine citrus juices, olive oil, chopped herbs, salt, and pepper. Add chicken breasts and let marinate for at least 30 minutes.
- Cook the Chicken: Heat a grill pan over medium heat. Remove chicken from marinade (reserve marinade) and cook each breast for 6-7 minutes per side until golden brown and fully cooked.
- Prepare the Salad Base: While chicken cooks, place mixed greens in a large bowl and add any additional vegetables you prefer.
- Create the Dressing: Whisk together reserved marinade with honey and extra olive oil until well combined.
- Assemble Your Salad Bowl: Slice cooked chicken and arrange it over mixed greens. Drizzle with dressing and toss gently to combine.
- Serve and Enjoy: Plate your salad bowls with extra fresh herbs on top.
