- 3 to 4 pounds beef chuck roast
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons Worcestershire sauce
- 4 large carrots, cut into pieces
- 4 medium potatoes, quartered
- 2 stalks celery, cut into pieces
- Fresh rosemary and thyme, plus bay leaves
Instructions
- Season the beef with salt and pepper.
- Heat oil in a Dutch oven over medium-high heat and sear the roast on all sides until browned.
- Sauté onion in the same pot until softened; add garlic.
- Return roast to the pot with broth, Worcestershire sauce, vegetables, and herbs.
- Simmer covered on low heat for 3-4 hours until tender.
- Rest before slicing and serve with cooking liquid.
Notes
- For a richer flavor, consider adding red wine to the broth.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
