Description

Delicious cheesy cookies shaped like stars, perfect for any occasion!


Ingredients

Scale
  • 100g strong cheddar
  • 50g Parmesan
  • 50g Gruyere
  • 210g unsalted butter, cold and sliced into cubes
  • ½ teaspoon salt
  • ½ teaspoon za’atar (or dried thyme)
  • 1 teaspoon chili flakes
  • 1 tablespoon fresh rosemary, chopped
  • 220g all-purpose flour
  • 1 tablespoon cornstarch (cornflour)

Instructions

  1. Slice the cheese into smaller pieces, then add it to the bowl of your food processor. Blitz until shredded.
  2. Add flour, cornstarch, chili flakes, za’atar, salt, cold cubed butter, and rosemary leaves to the bowl. Pulse until the mixture forms a soft dough.
  3. Transfer the dough to a lightly floured surface and roll it out into a rough rectangle, about 1/2 inch thick.
  4. Use a star cookie cutter to cut the dough into little stars and place them onto a lined baking tray.
  5. Chill in the fridge for at least 30 minutes.
  6. Preheat the oven to 350°F (180°C fan).
  7. Bake for 12 to 15 minutes until golden around the edges.
  8. Let cool slightly on the tray before transferring to a wire rack to cool completely.

Notes

  • You can make the dough by hand if you don’t have a food processor.
  • If the dough is too dry, add 1-2 teaspoons of cold water.
  • If the dough is greasy, add 1 tablespoon of extra flour.
  • For tidy cookies that keep their shape, chill the tray before baking.
