Delicious cheesy cookies shaped like stars, perfect for any occasion!
Ingredients

- 100g strong cheddar
- 50g Parmesan
- 50g Gruyere
- 210g unsalted butter, cold and sliced into cubes
- ½ teaspoon salt
- ½ teaspoon za’atar (or dried thyme)
- 1 teaspoon chili flakes
- 1 tablespoon fresh rosemary, chopped
- 220g all-purpose flour
- 1 tablespoon cornstarch (cornflour)
Instructions
- Slice the cheese into smaller pieces, then add it to the bowl of your food processor. Blitz until shredded.
- Add flour, cornstarch, chili flakes, za’atar, salt, cold cubed butter, and rosemary leaves to the bowl. Pulse until the mixture forms a soft dough.
- Transfer the dough to a lightly floured surface and roll it out into a rough rectangle, about 1/2 inch thick.
- Use a star cookie cutter to cut the dough into little stars and place them onto a lined baking tray.
- Chill in the fridge for at least 30 minutes.
- Preheat the oven to 350°F (180°C fan).
- Bake for 12 to 15 minutes until golden around the edges.
- Let cool slightly on the tray before transferring to a wire rack to cool completely.
Notes
- You can make the dough by hand if you don’t have a food processor.
- If the dough is too dry, add 1-2 teaspoons of cold water.
- If the dough is greasy, add 1 tablespoon of extra flour.
- For tidy cookies that keep their shape, chill the tray before baking.
