Instructions
- Sauté the aromatics: In a large soup pot or Dutch oven, heat olive oil over medium heat. Add the diced onions, and cook for 3–4 minutes until translucent. Stir in the garlic and cook for 1 more minute until fragrant.
- Build the base: Add the sliced carrots and celery to the pot. Stir occasionally and let them cook for about 5 minutes until slightly tender. This vegetable trio creates a classic and flavorful foundation.
- Pour in the broth: Add the chicken broth and bring the mixture to a gentle boil. Season with salt, pepper, and Italian seasoning. Let it simmer for about 10 minutes to allow the flavors to meld.
- Add chicken and tortellini: Stir in the cooked, shredded chicken and tortellini. Let the soup continue to simmer for another 5–7 minutes, or until the tortellini are tender and cooked through.
- Add greens (optional): If using spinach, stir it in during the final 1–2 minutes of cooking. It will wilt quickly and add a pop of color and nutrition.
- Serve and enjoy: Ladle the soup into bowls and garnish with freshly chopped parsley. Serve warm with crusty bread or a side salad.
