Description

Ingredients

  • 1 teaspoon dried Italian seasoning

  • 1 cup baby spinach (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sauté the aromatics: In a large soup pot or Dutch oven, heat olive oil over medium heat. Add the diced onions, and cook for 3–4 minutes until translucent. Stir in the garlic and cook for 1 more minute until fragrant.
  2. Build the base: Add the sliced carrots and celery to the pot. Stir occasionally and let them cook for about 5 minutes until slightly tender. This vegetable trio creates a classic and flavorful foundation.
  3. Pour in the broth: Add the chicken broth and bring the mixture to a gentle boil. Season with salt, pepper, and Italian seasoning. Let it simmer for about 10 minutes to allow the flavors to meld.
  4. Add chicken and tortellini: Stir in the cooked, shredded chicken and tortellini. Let the soup continue to simmer for another 5–7 minutes, or until the tortellini are tender and cooked through.
  5. Add greens (optional): If using spinach, stir it in during the final 1–2 minutes of cooking. It will wilt quickly and add a pop of color and nutrition.
  6. Serve and enjoy: Ladle the soup into bowls and garnish with freshly chopped parsley. Serve warm with crusty bread or a side salad.
