- 4 salmon fillets
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped
- 3/4 cup heavy cream
- 1/3 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Pat salmon fillets dry and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear salmon, flesh-side down, for 4-5 minutes until golden. Flip and cook another 2-3 minutes. Remove and set aside.
- In the same skillet, reduce heat to medium. Add garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
- Pour in chicken broth, let it simmer for 1 minute. Stir in heavy cream and Parmesan. Cook for 3-4 minutes until slightly thickened.
- Add Italian seasoning, salt, and pepper. Adjust to taste.
- Return salmon to skillet, spoon sauce over fillets. Simmer for 3-5 minutes until salmon is cooked through.
- Turn off heat, garnish with fresh parsley, and serve immediately.
Notes
- This dish pairs well with pasta or rice for a complete meal.
- For added flavor, consider marinating the salmon in lemon juice beforehand.
