Description

Delicious and spicy peanut noodles served with colorful vegetables and your choice of protein.


Ingredients

  • 8 oz thin rice noodles
  • 3 tbsp Sriracha sauce (adjust based on spice preference)
  • 3 tbsp natural peanut butter
  • 1 cup bell peppers, chopped
  • 1 cup carrots, sliced
  • 2 green onions, thinly sliced (for garnish)
  • Juice of 1 lime
  • ¼ cup chopped peanuts (for garnish)
  • 1 cup protein of choice (shrimp or tofu, optional)

Instructions

  1. Cook the rice noodles according to package instructions until tender (about 5-7 minutes). Drain and rinse under cold water.
  2. In a small bowl, mix peanut butter, Sriracha sauce, lime juice, and a splash of water until smooth.
  3. Heat oil in a large pan over medium heat. Sauté the bell peppers and carrots for about 3-4 minutes until slightly tender.
  4. Add cooked noodles to the pan along with the peanut sauce. Toss gently until everything is evenly coated and heated through.
  5. Finish by sprinkling with green onions and chopped peanuts before serving.
